Chunky Peanut Butter Biscuits

  • ½ cup melted butter
  • cup brown sugar
  • 1 whisked egg
  • 1 tsp vanilla essence
  • cup crunchy peanut butter
  • 1 cup all-purpose flour
  • ½ tsp salt
  • ½ tsp baking powder
  • 1 cup chocolate chips
  • ¼ cup mixed nuts


  1. In a bowl, sift together flour, salt and baking powder. Set aside

  2. In a separate bowl, stir together melted butter and brown sugar

  3. Add the egg and mix well, then stir in peanut butter and vanilla essence. Add flour, salt, and baking powder, and stir. Gently fold in chocolate chips and mixed nuts

  4. Cover bowl with cling-wrap and chill in fridge for at least 1 hour

  5. Preheat oven to 180˚C and line a baking sheet with wax paper or a silicone baking mat

  6. Scoop out tablespoon-sized balls of the mixture and place on baking sheet, making sure to leave adequate space between each ball

  7. Bake for 8-10 minutes, until bottom edges of biscuits are golden brown. Let biscuits cool before eating
