Baked French Toast

  • 4 slices bread
  • 2 eggs
  • ½ cup milk
  • 2 tbsp melted peanut butter
  • 1 tbsp melted butter
  • 1 tsp ground cinnamon
  • 1 tsp vanilla essence
  • 1 tbsp sugar
  • ¼ cup mixed nuts


  1. Preheat oven to 180°C and spray a small baking dish or a large ceramic bowl with non-stick spray. Use your fingers to shred the bread to pieces or a knife to cut the bread into cubes, then layer the bread evenly in the dish

  2. In a small bowl, whisk together eggs and milk. Add melted peanut butter and butter, cinnamon, vanilla essence and sugar, and stir until combined

  3. Pour the wet mixture over the bread, then give it quick stir to ensure the bread is evenly soaked. Sprinkle over the mixed nuts and put in the oven to bake for 30 minutes, until the French toast is browned and crispy
