Carrot Cake Oat Bars

Oat Bars

  • 2 cups rolled oats
  • 2 tbsp all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 2 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • 1 egg
  • ¾ cup Greek yoghurt
  • cup honey
  • ¼ cup cooking oil
  • 1 tsp vanilla essence
  • cups grated carrot

Cream Cheese Frosting

  • ½ cup softened cream cheese
  • 2 tbsp honey
  • 1 tsp vanilla essence
  • 1 tsp lemon juice


Oat Bars

  1. Preheat oven to 170°C and line a square baking tin with wax paper

  2. In a large bowl, add oats, flour, baking powder, baking soda and spices. Whisk lightly to stir

  3. In a smaller bowl, stir in egg, yoghurt, honey, oil and vanilla essence. Mix until just combined. Add wet ingredients to dry ingredients, along with grated carrot, and stir. Pour the mixture into the baking tin, spreading it equally, and bake for 30-35 minutes, until golden brown

Cream Cheese Frosting

  1. In a bowl, beat together cream cheese, honey, vanilla essence and lemon juice until properly combined. Using a piping bag, pipe the frosting onto individual carrot cake bars and enjoy
