Fruit and Trail Mix Baked Oatmeal

  • 1 sliced apple
  • 1 sliced banana
  • ¼ cup raisins
  • ¼ cup sunflower seeds
  • ½ cup mixed nuts
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • ¾ cup rolled oats
  • ½ cup milk
  • 1 tbsp Greek yoghurt
  • 1 tsp vanilla essence
  • 1 whisked egg
  • 2 tbsp honey


  1. Preheat the oven to 180°C and spray a small baking dish or casserole dish with non-stick spray

  2. Add the sliced apple and banana, raisins, sunflower seeds and mixed nuts to the prepared dish. Pour over the lemon juice, cinnamon and salt. Stir to ensure the fruit and trail mix layer is well-coated. Sprinkle over the oats until the base is properly covered

  3. In a bowl, mix together the milk and Greek yoghurt until smooth. Add the vanilla essence, whisked egg and honey, and stir well

  4. Pour the wet mixture equally over the dry mixture and bake for 20 minutes. Enjoy immediately or store in the fridge until the next morning, then re-heat in the oven for 5-10 minutes
