Spiked Ginger and Apple Iced Tea

Servings 2 litres


  • 1.2 litres boiled water
  • 5 rooibos tea bags
  • thumb-sized stick of ginger
  • ΒΌ cup honey
  • 1 tbsp brown sugar
  • 2 cups apple juice
  • 1 cup dark rum
  • 1 tsp lime juice
  • sliced apples for garnishing


  1. Pour boiled water into large jug and add tea bags and ginger. Cover the jug with foil, prick with a toothpick, and allow to brew for 10 minutes

  2. Remove the ginger and tea bags. Add honey and sugar, and stir until dissolved. Pour in apple juice, rum and lime juice, and stir

  3. Allow to cool in the fridge for at least an hour. Serve with lots of ice and sliced apple
