I feel it’s necessary to give you a full warning before you attempt to make this recipe, or even read any further. This spiked iced tea is no amateur. It lulls you into a false sense of sobriety with its innocent rooibos and apple juice flavour. Then suddenly you stand up and realise your legs are wobbling, your cheeks flushed pink, and your general outlook on life significantly improved to the point that all you can do is smile dumbly.
In short, this spiked ginger and apple iced tea will get you totally rat-arsed, but in the loveliest and politest way. Think of spring afternoons spent tottering around the garden, drunken laughter fluttering about like butterflies, a floppy hat on your head, a sun dress tickling your knees, and ice cubes tinkling seductively as you sip on a glass of chilled iced tea. No? Okay, just me then.

You get to enjoy the refreshing taste of rooibos tea, crisp apple and smooth rum, all without worrying about stealing happiness from the following day. Maybe it’s the healthy combination of rooibos and ginger that does it – I don’t know and I don’t really care – but a hangover-free cocktail is one of the best gifts you can give to anyone.
Served with a generous helping of ice and sliced apple, what better way to while away a sunny afternoon than with a glass of this spiked ginger and apple iced tea. It’s so easy to make; simply chuck all of the ingredients into a jug, and you’ve got a potent cocktail ready within minutes.
Spiked Ginger and Apple Iced Tea
- 1.2 litres boiled water
- 5 rooibos tea bags
- thumb-sized stick of ginger
- ¼ cup honey
- 1 tbsp brown sugar
- 2 cups apple juice
- 1 cup dark rum
- 1 tsp lime juice
- sliced apples for garnishing
Pour boiled water into large jug and add tea bags and ginger. Cover the jug with foil, prick with a toothpick, and allow to brew for 10 minutes
Remove the ginger and tea bags. Add honey and sugar, and stir until dissolved. Pour in apple juice, rum and lime juice, and stir
Allow to cool in the fridge for at least an hour. Serve with lots of ice and sliced apple
- Make a kid-friendly version of this iced tea by leaving out the rum, or a less alcoholic version by simply adding less rum. If you're Jack Sparrow and want a boozier flavour, then add another tipple of rum!
