I’ve learned that part of being a cook is feeling uninspired in your kitchen from time to time. You’re too tired (it’s been a long day at the office), maybe you’re a bit lazy (it’s been a long day on the couch), or maybe your pantry is looking a tad scarce (it’s been a long … month). I’ve suffered through all of these situations, asking myself what the hell am I going to cook, and I generally always land at the same conclusion: a quick and easy tomato salad.
When I’m in one of my I’d-rather-be-doing-anything-but-cooking moods, this tomato salad is like an angel descended down from heaven. It takes about two minutes to put together and requires no effort at all – perfect for those days when I’m lacking inspiration. It also helps that I’ve always got the ingredients on hand, because tomato and cheese are as crucial as TP in our home.
This tomato salad works great as a side dish for any meal, but I personally enjoy it alongside a grilled piece of fish or some homemade crumbed chicken breasts. You can also make it a more filling meal on its own by adding some pan-fried chicken strips, avocado chunks or mixed lettuce leaves.
Quick and Easy Tomato Salad
Prep Time 5 minutes
Servings 2 people
- 1 cup cherry tomatoes (halved or quartered)
- ½ cup diced cucumber
- 1 sprig diced spring onion
- ½ cup crumbled feta cheese
- 2 tsp lime juice
- salt and pepper
In a bowl, add cherry tomatoes, cucumber, spring onion and feta cheese. Drizzle over the lime juice and salt and pepper, and stir well
