Chunky peanut butter biscuits with a chewy centre, chocolate lumps and crunchy nut pieces
Peanut butter is a staple in our home. If you open that pantry cupboard, you can be sure there will always be a jar of the deliciously sticky, crunchy butter waiting to be spread on a slice of toast. Or added to a bowl of steaming oats, lathered onto a spongy golden crumpet, or incorporated into a fresh batch of cookie dough. I’m definitely most fond of the last option!
I came across the recipe for these chunky peanut butter biscuits on Buzzfeed Tasty, and I can honestly say that these are the best biscuits I’ve ever baked. They have a soft and creamy texture, with mouthfuls of chocolate chips and crunchy nut pieces in every bite. And then there’s the pleasantly overwhelming taste of that sweet-and-salty peanut butter – the taste of childhood. These biscuits are also incredibly filling, and I was surprised to find that I struggled to have more than one with my morning coffee.
These chunky peanut butter biscuits are the perfect treat to whip up when you’ve got a sudden sweet craving. They’re quick and simple to make, using standard ingredients that you’ll most likely already have in your cupboard. These were done and dusted within a few hours of my Saturday morning, and they lasted only a few days before there was nothing but crumbs left!
Chunky Peanut Butter Biscuits
- ½ cup melted butter
- ⅔ cup brown sugar
- 1 whisked egg
- 1 tsp vanilla essence
- ⅓ cup crunchy peanut butter
- 1 cup all-purpose flour
- ½ tsp salt
- ½ tsp baking powder
- 1 cup chocolate chips
- ¼ cup mixed nuts
In a bowl, sift together flour, salt and baking powder. Set aside
In a separate bowl, stir together melted butter and brown sugar
Add the egg and mix well, then stir in peanut butter and vanilla essence. Add flour, salt, and baking powder, and stir. Gently fold in chocolate chips and mixed nuts
Cover bowl with cling-wrap and chill in fridge for at least 1 hour
Preheat oven to 180˚C and line a baking sheet with wax paper or a silicone baking mat
Scoop out tablespoon-sized balls of the mixture and place on baking sheet, making sure to leave adequate space between each ball
Bake for 8-10 minutes, until bottom edges of biscuits are golden brown. Let biscuits cool before eating
- For super soft biscuits, store a slice of bread with the biscuits in an airtight container. They come out with the most amazing soft and chewy centre.
