Peppered with chunks of red, white and green, these colourful Christmas cookies are full of festive fun and flavour
Baking Christmas cookies is one of my favourite pastimes of the festive season – AKA Cookie Season. I’ll usually wake up early on the weekend and spend my morning pottering around the kitchen, my fingers covered in cookie dough, singing along to Michael Bublé and Mariah Carey to an audience of sugar, butter, flour and eggs.
During this season, I tend to stick with baking the more traditional festive cookies like sugar cookies and shortbread. But this year I broke the norm and tried something quite different – chunky colourful Christmas cookies! Not a sweet and crunchy sugar cookie, nor a melt-in-your-mouth shortbread biscuit or a warmly spiced gingerbread man, but these colourful Christmas cookies are full of festive fun and flavour.
Loaded with oats, almonds, white chocolate chunks and festive coloured M&Ms, these chunky colourful Christmas cookies are a delicious mess. They have a subtly sweet vanilla flavour, and the most amazing buttery, crunchy, chunky texture. Peppered with chunks of red, white and green, they’re also festive AF and darn pretty to look at.
Baking a batch of these colourful Christmas cookies is so quick and easy, you could whip them up on Christmas eve’ and have them ready for Father Christmas in no time. There’s no chilling time, no rolling out of the dough, and no frosting required. All that’s needed is to make the dough, shape it into balls, bake for 20 minutes, then guzzle these Christmas cookies down with a glass of milk or hot cup of tea.
Chunky Colourful Christmas Cookies
- ½ cup softened butter
- ½ cup sugar
- 1 egg
- 1 tsp vanilla essence
- 2 tbsp milk
- 1 cup all-purpose flour
- ½ tsp baking powder
- dash of salt
- ¾ cup rolled oats
- ⅓ cup red, green and brown M&Ms
- ⅓ cup white chocolate chunks
- ⅓ cup almonds
Preheat oven to 170°C and line a baking tray with a silicone baking mat or wax wrap
In a large bowl, cream together butter and sugar. Add the egg, vanilla essence and milk, and whisk to combine
Sift in the flour, baking powder and salt, and add the oats, M&Ms, white chocolate and almonds. Make sure you keep a small handful of these aside to pop on top of the cookies later! Use a spoon to mix together the ingredients until properly combined
Spoon a tablespoon-sized ball of the mixture into your hands and roll to form a flattish ball. Place on the baking tray and flatten it down slightly, then repeat. Pop the remaining M&Ms, chocolate chunks and almonds onto the cookies, and press down gently
Bake in the oven for 20-25 minutes, until the bottoms are golden
