With grated carrot, warm spices, raisins and pecans, these carrot cake overnight oats taste like real carrot cake!
By now, you must all have caught on to the fact that I’m crazy for carrot cake and obsessed with overnight oats. And who can disagree with me, really? Carrot cake is one of the yummiest desserts on the menu, and overnight oats are a godsend for those grab-and-go sort of mornings. Fuse these two ideas together, and what do you get? Carrot cake overnight oats – a simple breakfast that’s as delicious as it is good for you!
Using ingredients like grated carrot, cinnamon and nutmeg, chewy raisins and crunchy pecans, these carrot cake oats really do taste like carrot cake. And I’ll take any excuse to have pud’ for breakfast, especially when it’s as easy to make as this! Chuck everything in a bowl, add the ingredients, stir, stir, stir, then leave to soak. Sort of like running yourself a bath.

Carrot Cake Overnight Oats
- ¾ cup rolled oats
- ½ cup milk
- ¼ cup plain yoghurt
- 1 tsp vanilla essence
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground ginger
- 2 tbsp honey
- 1 grated carrot
- 2 tbsp raisins
- 1 tbsp pecan nuts
In a large bowl, add oats, milk, yoghurt, vanilla essence and spices. Stir until properly combined. Mix in honey, grated carrot and raisins, and leave to soak in the fridge overnight
Stir the porridge, and add a splash of milk if necessary. Garnish with whole pecans, and enjoy!
